Flake salt is named for its large flat particles. It is a good pinching salt, added to food at the last moment to enhance flavor and add crisp texture. Surface evaporation is used to produce natural flake salt but it can also be manufactured by mechanically rolling granular salt. Flake salt's large delicate crystals stick readily to surfaces such as baked goods and chocolate and dissolve quickly in solution.
